Talking Italian with Pasta Mozzarella

Its Friday and how are you today? Do you have something exciting planned for the bank holiday weekend. Assuming that the rain that we have been having stops we shall no doubt be spending time in the garden. Sorry – I digress we are supposed to be talking Mozzarrella . . .and so we shall we are Talking Italian with Pasta Mozzarella. I love Mozzarella there is so much you can do with it –  eat with tomato salad, as a topping for roasted stuff peppers  – all deserve a yum!- so many recipes that I just want to share and of course I will if you will let me.

This is my basil on the window sill one of my favourite herbs and such a wonderful smell (I thought it so lovely I just had to put it in)! . . .and we do use it in this recipe!

How to make Pasta Mozzarella, you will need

  • 250g Mozzarella
  • x2 400g tins of Chopped Tomatoes
  • 300g Pasta ( I usually use Penne or spiral pasta, and this amount I use for 2 adults and 2 children – if you are all really hungry add a bit more!)
  • Olive Oil
  • 1 tblsp Pesto
  • 1/2 glass red wine

Cook your pasta until it is just about ready (it wants to be just slightly under cooked) al dente, drain

In a seperate  pan add 2 tblspoons olive oil, the tomatoes, pesto and wine, heat through

Add your pasta to an oven proof dish then add your tomato sauce, gently mix through so that all the pasta is covered

Now rip your mozzarella into chunks and place randomly on the top

Bake in your oven for 15mins approx or until the mozarella has melted and turned golden brown (not too crisp)

Serve immediatly with fresh basil leaves on the top

You can serve with warmed ciabatta bread with a dish of olive oil for dipping Yum!

This pasta dish is so easy to make and loved by adults and children alike, have fun with this one and have a great weekend
