Something for the weekend – Katie’s Easy Risotto with Prawns and Spinach

This is the first of our new series of ‘something for the weekend’ and I decided to make a tasty but easy supper – Katie’s Easy Risotto with Prawns and Spinach, with spring on the way it is time to put all the bread and cakes and puddings (well maybe not all of them)!  to one side. Sometimes I have absolutely no idea what to make for dinner and yet there are other times when I can plan out a whole week of dinners. I am vegetarian but my children  and my husband are not, so finding something that we can all eat is sometimes a challenge – oh and then there is my son who doesn’t like peppers or onions! unless of course he doesn’t see them!!

So risotto is one of those dishes that just about pleases all of us.

To make risotto for 4 you will need

  • 1lb / 500g Arborio Risotto Rice
  • 1/2 lb / 250g Frozen Prawns
  • 2 small onions (I use red they are sweeter)
  • 1 Clove Garlic
  • Lemon Juice
  • Salt
  • Black Pepper
  • 150ml White Wine
  • 750ml Chicken / Vegetable stock
  • 2 good sized handfuls of roughly chopped fresh Spinach
  • 2 table spoons Olive Oil
  • Some grated Pecorino Cheese
  1. Heat your olive oil and add the onions and garlic until soft
  2. Add your rice gently mix to cover the rice in the olive oil
  3. Add your wine and simmer for 2 minutes stirring continuously
  4. Add your stock a little at a time keep and then add the prawns
  5. Keep adding your stock until the rice has absorbed all of the liquid and has cooked
  6. Now add your lemon juice and add in your roughly chopped spinach
  7. Turn over the mix in your pan and the spinach will quickly wilt with the heat mix into the rice
  8. Be careful at this point that the rice doesn’t stick to the pan, at this point add seasoning to taste
  9.  Serve with some grated Pecorino cheese ( or Parmesan if you prefer)

I hope you enjoy this dish it is an easy supper that looks good and tastes fantastic and with spring clearly in full swing it makes a great change from all the stodgy food of the winter months.
