Delicious carrot soup, warm and cheerful as the leaves are fallling, it really is getting colder, the logs are chopped and the fire is on – the crumpets are ready for toasting. All of this means SOUP time, and I thought I would make the family favourite Carrot Soup.
My son once wrote in his news book that ‘at the weekend my mummy made my favourite soup, it is orange and warm in tummy and I love her’ and yes a few years later he still enjoys a bowl of steaming warm carrot soup.
So here’s how to do it
- 1kg Carrots
- 1 Onion
- 1 Medium Potato
- 1 litre Water ( or you can use a chicken or vegetable stock)
- Peel and chop the carrots and potato and chop the onion, place in a pan with the oil and saute carrots and onions until slightly tender
- To the pan add the water (or stock) and simmer for about 30 minutes – until your carrots and potatoes are soft
- Transfer to a blender and blend until smooth
Now there are a few variations
For Carrot and Orange Soup
You will need the above ingredients plus 1 orange
At the same point as you add the stock add the zest and juice of an orange
For Carrott and Corriander
The above ingredients plus 2 teaspoonfuls of Corriander plus a good bunch of fresh Corriander (Chopped)
Step 1 as above and then add the 2 teasponfuls of Corriander making sure that the carrots and the onions are well coated now proceed to Step 2 just before transfering to the blender add your fresh coriander ( keep a spoonful back for decoration)
Whatever variation you have opted for serve with warm crusty bread and a twirl of cream or why not make some of my homemade bread yum!
And there we have it 3 variations of Carrot Soup, this is a good value soup and easy to do, if you dont have a blender – use a potato masher it wont be quite so smooth but still tasty.
