Apples day 2 – Apple Crunch Muffins. My granny used to make the most amazing Apple Cake, I have taken her recipe and made it into muffins, adding a few little extra’s along the way.


How to make Apple Crunch Muffins

  • 145g (5oz) Plain Flour
  • 145g (5oz) SR Flour
  • 120g (4oz) Light Brown Sugar
  • 2 large apples
  • 60g (2oz) Sultanas or mixed fruit (optional)
  • 2 Free Range Eggs
  • 90g (3oz) Melted Butter
  • 8 fl oz ( 230 ml) Milk
  • 1 tsp Baking Powder
  • 1tsp Cinnamon
  • 2 large Apples, peeled and chopped

For the Crunch Topping

  • 60g (2oz) Flour
  • 60g (2oz) Light Brown Sugar
  • 60g ( 2oz) Butter – cut into small peices
  • 30g (1oz) Rolled Oats
  • 30g ( 1oz) Flaked Almonds
  1. Preheat oven to 200 deg C/ 400 deg F / Gas Mark 6
  2. First make the crunch toping, add the flour and the butter to a bowl and rub in with your finger tips until it resemble breadcrumbs, add the sugar, oats, almonds and cinnamon, stir to mix and leave to the side
  3. Now make the muffins, in a large bowl sift the flour, baking powder and cinnamon. Stir in the sugar and the chopped apple and mixed fruit
  4. In a large jug beat the eggs and beat in the milk and melted butter
  5. Make a well in the middle of your dry ingredients and add the egg mix, now stir to ensure everything is mixed
  6. Now place the muffin mix into a prepared muffin tin ( I use individual muffin cases ), 3/4 fill each case and scatter a layer of crunch topping onto each muffin
  7. Bake for 15  – 20 minutes, the toping should be a golden brown, the muffins well risen


Enjoy with a cup of your favourite tea or coffee. Great at any time of the day.
