Here we are in July and the Broad Beans are in abundance and they are so lovely.

At this time of year we seem to have broad beans with everything, we all love them. I thought I would share a few ideas, here are a few of the ways that I have used our Broad Beans:

Broad Bean Rissotto

  • 1/2lb / 250g Arborio Risotto Rice
  • Mussels about 125g
  • 1 small onion (I use red they are sweeter)
  • Lemon Juice
  • Salt
  • Black Pepper
  • 75ml White Wine
  • 350ml Chicken / Vegetable stock
  • 2 table spoons Olive Oil
  • Broad Beans a handful or two, slightly cooked
  • Peas a handful or two, fresh from the garden or frozen
  • Some grated Pecorino Cheese
  1. Heat your olive oil and add the onions until soft
  2. Add your rice gently mix to cover the rice in the olive oil
  3. Add your wine and simmer for 2 minutes stirring continuously
  4. Add your stock a little at a time keep and then add the mussels
  5. Keep adding your stock until the rice has absorbed all of the liquid and has cooked
  6. Now add your lemon juice and add in broad benas and peas
  7. Be careful at this point that the rice doesn’t stick to the pan, at this point add seasoning to taste
  8.  Serve with some grated Pecorino cheese ( or Parmesan if you prefer)

Broad Beans with Onions and Bacon

  • Beans for 2 people  ( 2 handfuls)
  • 4 slices of Free Range Bacon
  • 1 small onion (finely chopped)
  • Juice of half a lemon
  1. Cook beans and discard the outer skins
  2. To a pan of warmed olive oil add the onion and sute gently until soft
  3. Add your beans and bacon and sauted for 5 mins (approx)
  4. Add the lemon juice
  5. Enjoy

Broad Beans wih Pesto and New Potatoes

Now this one I made by accident, it was delicious, I din’t take photos as it wasn’t the best looking dish, but it tasted devine.

  • Broad Beans for 2 (2 handfuls) cooked
  • 5 med New Potatoes chopped and cooked
  • 250g Kidney Beans
  • Pesto
  • Spinach – chopped
  • Olive Oil
  1. In a pan of warmed oilive oil add the potatoes, Broad Beans and Kidney Beans warm gently
  2. Now add a tablespoon of pesto and mix gently
  3. Add the chopped spinach and allow it to wilt
  4. Serve onto a warmed plate and serve with warm crusty bread – delicious!

Broad Beans with Roasted Vegetables

To an oven proof dish add some peppers, onions and braod beans – roast
