With the sun beginning to shine, and it ‘s March, how did that happen, suddenly the year is ‘marching’ on – the days becoming longer and Spring is on the horizon. With Spring comes the promise of warmer days, first flowers, and the smell of freshness in the air.

With all this in mind I thought a cake with a some fruit and a little bit of zesty freshness would be good and it is a while or so it seems since I last posted a cake recipe.

Here is my recipe for Orange and Apricot Cake

4oz (100g) butter
4oz (100g) self Raising Flour
4oz (100g) soft brown sugar
1 orange
4oz (100g) dried apricots
2 free range medium eggs

You will need an 8″ (20cm ) loaf tin

Heat the oven to 180 deg C, 350 deg F, gas mark 4

  1. Cream the butter and sugar
  2. Chop the apricots, zest the orange add to the bowl with the creamed sugar and butter
  3. Add the flour and eggs, beat the mix until it is light and fluffy
  4. Grease and line your loaf tin and spoon the mix
  5. Bake for 40 minutes or until golden brown

For the icing

4oz (100g) icing sugar
2 tablespoons orange juice

  1. Mix the orange juice ( a little at a time) with the icing sugar
  2. Drizzle the icing over the top and let it run over the edge. Decorate with a little orange zest
